Apricot Power Bars
These gluten-free bars are a great quick-and-go breakfast. Mix 1 cup apricots, 2 cups pecans, 2 large eggs in a food processor, plus include a dash of vanilla; when mixture forms a ball, just flatten in a pan; pop them in the oven and bake for 25 minutes at 350 degrees. Your little early-morning risers will perk up to apricot power bars!
